Pot Luck Pleasure

Last week I was invited to a friends place for pot luck dinner. I decided to make some yummy vegan banana bites. No packaging was involved of course and the bites were a success so I thought I would share the recipe on here.


You need:


  • Unpackaged organic banana’s

  • Organic dark chocolate from the refill station at your local package free store (New Leaf Co Op)

  • coconut oil from a reusable jar

  • and cinnamon from a reusable tub


Process:


  • Chop banana’s into bite-size pieces and freeze for 40 minutes

  • Whilst the banana’s are freezing, melt a cup of the dark chocolate buttons in a glass bowl over a boiling pot of water

  • Add 1 or 2 tablespoons of coconut oil to melt with the chocolate (the oil is what makes the chocolate harden later)

  • Add two teaspoons of cinnamon (you can be creative here. . add what you like to the chocolate sauce according to taste)


When the banana’s are cold enough/frozen, dip them in the chocolate sauce and watch the magic as the chocolate hardens almost instantly as it touches the banana.


I added half an almond to the top of each bite for extra taste and decoration.


After all the pieces have been covered in chocolate put them back in the freezer for 30/40 minutes


(if you can wait that long)


I would leave the bites to sit out for a while before eating them as they could be too hard to enjoy straight out of the freezer. Plus we found if you leave them at room temperature for a while they go gooey inside and burst in the mouth. . Super tasty and Amazing!
